Hey Internet!! Today I am going to start a series about Disney-esque Cocktails – these are drinks I create at home based on my favorite drinks in the parks! Disney (especially Epcot during Festival Season) serves up a mad (yet expensive) cocktail – when I find one I REALLY like (especially if it is a festival drink) I try to recreate it at home – it is cheaper and that way this
hermit introvert doesn’t have to leave the house to enjoy a good drank!
The cocktail I’m sharing today was featured at a booth at the First Annual Epcot Festival of the Arts! A note about “festival season” – Epcot currently hosts three annual festivals – International Food and Wine Festival in the Fall, Flower and Garden Festival in the Spring, and new this year (and now my all-time favorite!) Festival of the Arts in January/February. The festivals are great! They have special merchandise, entertainment, and (most importantly) food and drink booths. It is not uncommon for Adorabeezle and to hit up Epcot just for festival food – no rides, no shows, just get some food and some drank and then go home to the cats.
The Festival of the Arts had some of my all-time favorite festival food.
There was the Choriqueso Taco served with Chihuahua Cheese, Red and Green Peppers over a Corn Tortilla and garnished with Poblano Peppers and Micro Cilantro with the Mandarin Ginger Margarita
Then there was the Wild Mushroom Risotto, Aged Parmesan, Truffle Shavings and Zinfandel with a Classic Sidecar with Chocolate Twist
There was the Flank Steak Guarache with Black Beans, Salsa de Chile de Arbol, Frisee Lettuce, Queso Fresco, Shredded Carrots, and Chipotle Mayonnaise with the Passion Fruit Coconut Margarita (My FAVORITE… but alas, I haven’t figured out quite how to recreate it yet…)
And the Braised Beef Short Ribs with Parsnip Purée, Broccolini, Baby Tomatoes, and Aged Balsamic with the Port Wine-poached Pear, Vanilla Panna Cotta and Pistachio Crumbs
Then the Sous Vide Venison with Butternut Squash Purée, Pomegranate Reduction, Pickled Turnips, and Juniper Berry Powered with the Popping Bubbles Cocktail.
Also with the Popping Bubbles Cocktail was the Almond Frangipane Cake with Raspberry Jam and Chocolate (also AMAZING – plus it made me feel like I was on the Great British Bake-off)
Basically every time I went to the festival I was like:
Did I mention there was also a lot of actual art? there was. I really liked this Donald picture – painted by Donald himself!!
So today I’m going to teach you how to make the Popping Bubbles Cocktail! This one was a lot of fun, and is super easy to make (but it does take a bit of an investment up front – also fridge space). The only things you need for this drink are:
- Popping Boba (I like strawberry – at the festival they started with strawberry and then switched to peach. Both were good!) – You can get popping boba on Amazon (with Prime!… sometimes…) but most of them are sold in 7 lb tubs… I know what you are thinking. You are thinking “Liz you did NOT buy a seven pound tub of popping boba!!” and the answer is no! I didn’t!… I bought two… The first one lasted like four months, but I just got my second tub a few weeks ago. No Shame (Guys it’s so good!).
- Sparkling Wine – The festival used a dryer wine, but a pink Moscato also works great, whatever kind you like!
- Bobo Straws
To make the drink just spoon some boba into a glass and top it off with the sparkling wine! This would be a really fun cocktail for a party – it’s more whimsical than regular wine, and then if you didn’t want 7 lbs of boba sitting in your fridge, you could make a big dent in it! Plus your friends will think you are fancy AF.

Hello Internet and Welcome to Life Slightly Mastered!!!!
I am so excited to get back to blogging! After graduating with my Master’s degree, Baby Got B.A. no longer really fit (Sad. I love that name.) So after some thought and A LOT of texting various people for advice, I came up with Life Slightly Mastered. The new name speaks to me at this point in life because while I now have my master’s degree, I definitely don’t feel like a real grown up. So my life is just slightly mastered.
With the new name (and the new design, which I love), I thought I would re-introduce myself!
My name is Liz. I am recently out of grad school and working in Orlando (I love you, Orlando! Sea World and Disney and putt-putt GOLFING… Book of Mormon (the musical) anyone?) I love Disney, coffee, shopping, lipstick, wine, and rambling parentheticals. I have two cats, Ellie May and Olly (short for Ollivander) and live with a roommate, herein refereed to as Adorabeezle Winterpop. I am addicted to my Erin Condren planner (and all the stickers that go along with it), but I wish the simple act of keeping a planner would actually make me a real adult (apparently life doesn’t work like that).

Most of the things I write about have to do with living this Disney Life, mostly because all the fun stuff I do seems to take place on Disney property. I also dedicate a lot of time to cat-related material, fun food/drink in Orlando, and just life updates in general. I hope to add more recipes and/or crafting to that list, but I make no promises.
I am still adjusting to post-grad school life (it would be great if the school related anxiety dreams would stop), so I will be experimenting with and learning what kind of posts and schedule work for me. Basically I make no promises is what I am saying.
If you are coming back to this blog after a couple of off years (did I mention I was in grad school?), thanks for sticking with me! I’m excited to be back!
Hello Internet!!!! Boy howdy, has it been a long time – it turns out being a second year grad student and teaching two classes a semester is not a life style that is conducive to blogging… Who would have thunk it. Anyway, at the beginning of this month I graduated! I am officially a Master of Statistical Computing!! It’s a little bit crazy to think about. I’m not sure it has totally sunk in that I am done, but in a week and a half I start a new adventure and I think once that starts it will feel less like I’m on summer vacation and more like I am a real life working grown up… maybe…
Anyway, now that I have my masters, it feels like this here blog needs a bit of an update. Unfortunately Baby Got M.S. (Masters of Science) does not have the same feel (or meaning) that Baby Got B.A. has, so I’m currently racking my brain on how I want to “re-brand.” (Let me know if you have any new name ideas! I’m kind of at a loss)
I may not know how to rename the blog, but I do know for sure that I want to start blogging again. There is so much I have wanted to write about in the past year that just got lost in the shuffle. So, this post is just a quick “hey girl hey!” (or “hey boy hey!” this is an all-inclusive internet space) and a heads up that I will be coming back – hopefully soon! I plan on having posts on this here Disney life as well as some cooking, some crafting, maybe some fashion, and some talking about my cats (because obvi). I will probably also have the periodic “my life is a mess” post… again. Obvi.
Until I’m back with some new stories and a new name, I’ll leave you with some pictures from graduation weekend!
I was lucky enough to have my mom, dad, and grandparents fly down to see me graduate – They are all saints seeing as I got my masters in the first 20 minutes and then they had to sit through 1550 undergrads… it was a long ceremony.
And of course, I couldn’t have made it through grad school without Adorabeezle Winterpop. This girl has lived with me for the past three years and witnessed MANY a school related melt down. She even helped me study for finals and my comprehensive exam when she had no idea what was written on my flash cards. Bless her supportive, wonderful heart.

While they were in town, I got to take my mom and grandparents to Animal Kingdom, EPCOT, and the Hoop Dee Doo Musical Revue! It was a great way to celebrate!

Well HELLO Internet
I know it has been forever and a half since I updated this here little blog, but life is busy and blogging just has not made the cut priorities-wise.
Things that have made the cut:
- Working of a crochet project from over a year ago
- Thinking about how I should PROBABLY start studying for my comprehensive exams in August
- Criminal Minds
- Crying about how much I miss the cats (more on that in a second)
- Being in two weddings
- Day dreaming about sleep
- Buying Hamilton Chicago tickets… for next March…
- Starting my first set of Power Sheets!
So as you can see I have been VERY busy.
Since I wrote last, I finished my second semester of my master’s program and I moved to central Illinois for the summer to do an internship. I’ve been loving it, but I miss Adorableezle and Winston and Ellie May like a crazy person. Seriously. Everyday she snaps me pictures of the cats, and everyday I send her pictures of me getting all weepy and saying “WHY DO YOU WANT ME TO CRY ALL THE TIME?!?!” But I would cry more if I didn’t have my cat pictures… and now I’m sad again…
But other than the cat-related sadness, Central Illinois has been surprisingly great! The town I am in is a college town with a lot of fun things to do (ok… that may be a stretch… I mean lots of fun restaurants to try. And I do mean lots – the most restaurants per capita in the whole US). There is a cute Farmer’s Market on the weekends, and I am only a two and a half hour drive from home, a vast improvement over my normal two and a half hour flight.
This summer is also a study in adulting – It has been a while since I had a regular 40 hour a week job, and I am figuring out how to have a job and a life and how to be a Real Life Person instead of just a grad student (if you don’t understand the difference between the two, you probably aren’t in grad school). But, it is just for a summer, and I do have to go back to school in a month and a few days. As such, I have already starting having anxiety dreams about failing my comprehensive exams and showing up to my first day of teaching (I have my own class next semester! Holla!) with no syllabus and no lesson plans… So clearly I am having a very relaxing and not at all stressful summer.
Anyway, that has been my life recently. I would promise that you will be seeing me around these here internet parts more, but I don’t want to make promises I can’t keep. For now, here are some instagram highlights from my summer:

So there you have it, Internet! How have YOU been recently?
Hello Internet!!! How are you? I’m on spring break, so naturally I am doing swimmingly. This spring break I am traveling – visiting my dad in San Francisco and my bestie in Denver. I’m gone the entire 9 days of my spring break, and while I am super excited about my visits, a 9 day trip posted a special kind of challenge.
You see internet, I am a chronic over-packer. I cannot leave the house without EVERYTHING I think I might possibly need, and when I am gone for 9 days… well that can be dangerous. I tend to just throw all of my clothes into a suitcase at that point because what if I want to wear this one shirt I haven’t worn in three months and I can’t because I didn’t pack it?!? Yes… I know I am a crazy person…
But internet, I have discovered something that has changed the way I will pack forever. Adorabeezle told me about this and I find it to be completely genius.
Before my trip, not only did I (ok, we. I made Adorabeezle help me) lay out outfits for each day, but
I we picked out accessories and shoes and took a picture of them. This way I we packed exactly the amount of clothes I need and didn’t over do it on the accessories either. Plus – and this is where it gets amazing – I don’t have to try to figure out what to where everyday. I can literally get out of bed, take a shower and check my phone to see what the outfit for the day is. It takes all guess work out of it and I love it so much. Actually, I love it so much that I might just continue to do this when I get home. It truly feels revolutionary.

So that is my new packing tip and now you know exactly what I’ve been/what I will be wearing this spring break. Also you get to see the crazy amount of damage I did at Old Navy during their big sale a few weeks ago… so so so much damage…
