Poppin’ Those Bubbles | A Disney-esque Cocktail

Hey Internet!! Today I am going to start a series about Disney-esque Cocktails – these are drinks I create at home based on my favorite drinks in the parks! Disney (especially Epcot during Festival Season) serves up a mad (yet expensive) cocktail – when I find one I REALLY like (especially if it is a festival drink) I try to recreate it at home – it is cheaper and that way this hermit introvert doesn’t have to leave the house to enjoy a good drank!

 

The cocktail I’m sharing today was featured at a booth at the First Annual Epcot Festival of the Arts! A note about “festival season” – Epcot currently hosts three annual festivals – International Food and Wine Festival in the Fall, Flower and Garden Festival in the Spring, and new this year (and now my all-time favorite!) Festival of the Arts in January/February. The festivals are great! They have special merchandise, entertainment, and (most importantly) food and drink booths. It is not uncommon for Adorabeezle and to hit up Epcot just for festival food – no rides, no shows, just get some food and some drank and then go home to the cats.

 

The Festival of the Arts had some of my all-time favorite festival food.

 

There was the Choriqueso Taco served with Chihuahua Cheese, Red and Green Peppers over a Corn Tortilla and garnished with Poblano Peppers and Micro Cilantro with the Mandarin Ginger Margarita

 

 

 

Then there was the Wild Mushroom Risotto, Aged Parmesan, Truffle Shavings and Zinfandel with a Classic Sidecar with Chocolate Twist

 

 

 

There was the Flank Steak Guarache with Black Beans, Salsa de Chile de Arbol, Frisee Lettuce, Queso Fresco, Shredded Carrots, and Chipotle Mayonnaise with the Passion Fruit Coconut Margarita (My FAVORITE… but alas, I haven’t figured out quite how to recreate it yet…)

 

 

And the Braised Beef Short Ribs with Parsnip Purée, Broccolini, Baby Tomatoes, and Aged Balsamic with the Port Wine-poached Pear, Vanilla Panna Cotta and Pistachio Crumbs

 

 

Then the Sous Vide Venison with Butternut Squash Purée, Pomegranate Reduction, Pickled Turnips, and Juniper Berry Powered with the Popping Bubbles Cocktail.

 

 

Also with the Popping Bubbles Cocktail was the Almond Frangipane Cake with Raspberry Jam and Chocolate (also AMAZING – plus it made me feel like I was on the Great British Bake-off)

 

 

 

Basically every time I went to the festival I was like:

 

 

Did I mention there was also a lot of actual art? there was. I really liked this Donald picture – painted by Donald himself!!

 

So today I’m going to teach you how to make the Popping Bubbles Cocktail! This one was a lot of fun, and is super easy to make (but it does take a bit of an investment up front – also fridge space). The only things you need for this drink are:

 

  • Popping Boba (I like strawberry – at the festival they started with strawberry and then switched to peach. Both were good!) – You can get popping boba on Amazon (with Prime!… sometimes…) but most of them are sold in 7 lb tubs… I know what you are thinking. You are thinking “Liz you did NOT buy a seven pound tub of popping boba!!” and the answer is no! I didn’t!… I bought two… The first one lasted like four months, but I just got my second tub a few weeks ago. No Shame (Guys it’s so good!).
  • Sparkling Wine – The festival used a dryer wine, but a pink Moscato also works great, whatever kind you like!
  • Bobo Straws

To make the drink just spoon some boba into a glass and top it off with the sparkling wine! This would be a really fun cocktail for a party – it’s more whimsical than regular wine, and then if you didn’t want 7 lbs of boba sitting in your fridge, you could make a big dent in it! Plus your friends will think you are fancy AF.
